This story starts as many good stories do – with a big, hot plate of crispy bacon. I could end the story right here, and I think we (aside from the vegetarians) would all go home happy. But since it’s not socially acceptable to sit down and eat an entire plate of solely bacon, I’ll give you a recipe to go along with it. And I’ll make it a quick and easy one, since I know mankind can only be so virtuous around a tempting stack of sizzling bacon.
To get started you’ll need three ingredients – bacon, avocado, and croissant rolls – the crispy flaky kind that come in a little pop-can. Pop open your party of fun (the croissant rolls) and lay them out flat on a clean surface.
Then, slice open your avocado and spoon out a good chunk on the base of each roll. For four rolls, I used 2/3 an avocado and 8 slices of smoked bacon.
Now it’s time to add the hero of the recipe, the bacon. Add one slice (or two or three, depending on your preference) to the avocado stack.
As I used smoked bacon, I didn’t add any salt or pepper. But if you’re going au natural, I recommend a good dusting from our two favorite table shakers. Next, role up your little bacon dumplings and pop them in the oven. Follow the instructions on your croissant can for baking instructions, as time and temperature may vary. As a benchmark, mine took about 10 minutes to bake in a 200°C oven.
When they’re done, be careful, they’re hot! Take them out of the oven, pop ’em on a plate and give them a moment to cool off.
While your bacon-avocado rolls are cooling, I recommend poaching or frying an egg to accompany them. They’re delicious on their own, but as B (my chief taste tester) rightly said, they’re more fun when you have something to dunk them in.
You could make a small bowl of poached eggs, or just one sunny side up egg, ready for the dunking.
Serve with some OJ, preferably in bed . . . and enjoy your meat candy, you’ve earned it!

*drool* I’m jealous you get croissant rolls in a can! we can’t find anything CLOSE to an american bisquit in brussels…but whenever do find them, i’m totally trying this! it looks strangely easy!!

Ohh really?? We have them here in Holland. Funny enough though they sell them in the refrigerated cheese section. I guess you’re close enough to France where canned croissant rolls are considered a travesty ;)
